Fruit Cocktail Cake

Biscuits

Preheat oven to 475 degrees.

Ingredients:

2 1/2 c. buttermilk

6 c. self-rising flour

3/4 c. cold butter

Additional butter for pan and for brushing on top of biscuits after baking.

Melt a tablespoon of butter in cast-iron skillet in pre-heating oven while preparing ingredients.

Cut butter into flour with fork or pastry blender until it is the texture of corn meal. Add cold milk.

Turn dough onto floured surface and knead 10 to 15 times. Roll dough to 1/2-inch thick and use biscuit cutter to cut dough. Place in hot buttered skillet side by side and bake for 10 minutes. Brush with melted butter when removed from oven.

For crispy sides on biscuits, place about 1/2-inch apart. Larger biscuits take longer to bake than smaller biscuits.
