Hamburger Rice Casserole
Recipe by Linda Whitaker, in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library
1 lb. hamburger
1 c. green peppers, chopped
1 c. celery, chopped
1 chopped onion, optional
1 can cream of mushroom soup
1 can chicken with rice soup
1/2 c. quick cooking rice
1 can French cut green beans, optional
Brown hamburger, green peppers, celery and onion. Add soups, rice and green beans. Cover and simmer for 20 minutes. Pour into two-quart casserole dish. Bake at 350° for 25 to 30 minutes.
