Yogurt Biscuits
Recipe by Gwen Hokeah, Pea Ridge, in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library
1 c. and 2 Tbsp. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp salt
1/4 tsp. baking soda
2 Tbsp. cold margarine
1/2 c. plain yogurt
1 tsp. sugar
1/2 tsp. milk
In a bowl, combine flour, baking powder, salt and baking soda. Cut in butter until crumbly. Combine yogurt with sugar; stir into dry ingredients just until moistened. Turn out onto floured surface; knead four to five times. Place dough onto a greased baking sheet; pat into a 6- by 4-inch rectangle. Cut into six square biscuits (do not separate). Brush tops with milk. Bake at 450º for 12 to 15 minutes. Serve warm.
