Quick Fruit Cobbler
Recipe from Mary Lou Beisner, former publisher of The TIMES
1 c. sugar
1 c. milk
1c. flour
2 tsp. baking powder
4-5 c. drained fruit
1/2 c. sugar (more if needed in fruit)
1 stick butter
Dot bottom of 9-inch cake pan with butter. Combine sugar, flour, milk and baking powder. Mix Well. Pour into pan. Spoon fruit and then sprinkle additional 4 Tablespoons of sugar and flour over fruit. Dot with 1 stick of butter, cut in slices. Bake at 325 degrees (350 degrees for metal) for 30-35 minutes.
Can add almond, vanilla or lemon extract or cinnamon, depending on fruit used.
