Green Tomato Pie

Ingredients:

6 to 8 medium green tomatoes

2 Tbsp. lemon juice

1 tsp. grated lemon zest

1/2 tsp. salt

1/4 tsp. ground cinnamon

3/4 c. granulated sugar

2 Tbsp. cornstarch

1 Tbsp. butter

Pastry for a 9-inch 2-crust pie

Directions:

Wash the green tomatoes, then peel and slice.

In a saucepan, combine tomatoes with lemon juice, lemon zest, salt and cinnamon. Cook the tomato mixture over low heat and stir frequently.

Combine sugar and cornstarch, then stir into tomato mixture. Cook the mixture until clear, stirring constantly. Add butter, remove from heat, and let stand until slightly cooled.

Line a 9-inch pie plate with pastry; then pour in the tomato mixture. Cover with top pastry, seal the edges, crimp, and cut several small slits in the crust to allow steam to escape.

Bake at 425 F for 35 to 45 minutes, or until nicely browned.

Serve warm or cool.
