Green Pea Medley

4 Tbsp. butter

4 Tbsp. flour

1/2 tsp. salt

1/8 tsp. pepper

2 c. milk

8 oz. shredded cheese

1 lg. can green peas

3 hard boiled eggs, chopped

1/3 c. chopped onion

Heat butter over low heat until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat and stir in milk. Heat to boiling, stirring constantly. Boil and stir for one minute.

Stir in 3/4 of the cheese; stir until melted. Heat and drain peas. Pour peas into baking dish; cover with cheese sauce. Sprinkle with eggs and onions. Top with remaining cheese. Slide under broiler to melt and cheese.
