Upside Down Pizza

2 tsp. olive oil

1 lb. sweet or hot turkey sausage, casing removed

1 c. onion, sliced

8 oz. mushrooms, sliced

1 c. pizza sauce

1 c. pasta sauce

1/2 c. black olives, sliced

16 oz. mozzarella cheese, shredded

2 eggs

1 c. milk

1 Tbsp. olive oil

1 c. all-purpose flour

1/2 tsp. salt

1/4 c. Parmesan cheese, grated

Preheat oven to 400 degrees.

Heat oil in large skillet over medium heat. Add sausage and cook for three minutes, or until browned and cooked through. Break up the meat as it cooks. Add onion and mushrooms; cook for two minutes, until soft. Add pizza sauce, pasta sauce and olives; bring to a simmer, about two minutes. Remove from heat and transfer sauce to the bottom of a 13- by 9-inch baking dish. Top with mozzarella cheese.

In a medium bowl, whisk together eggs, milk and olive oil until blended. Whisk in flour and salt until well blended. Pour mixture over sauce in baking dish. Sprinkle with parmesan cheese.

Bake for 25 minutes, or until golden brown. Let stand for five minutes before slicing and serving.

Sauce option: 1/2 pound turkey sauce, 1/2 pound hamburger, 1 teaspoon red pepper flakes
