Potato Soup

4 slices bacon

2-3 Tbsp. bacon grease

3 carrots

1 stalk celery

5 medium potatoes

1 small onion

1 can evaporated skim milk

3 Tbsp. flour

3+ c. milk

1/2 lb. Velveeta cheese

Dice four slices bacon and cook until crisp.

In drippings plus 2 - 3 more tablespoons bacon grease, cook 3 carrots, sliced; 1 stalk celery, chopped; 5 medium potatoes, diced; and one small onion, diced, for about 15 minutes or until tender.

Add 1 can evaporated milk and cook until warm.

In Dutch oven, mix 1 tablespoon flour with a small amount of milk to make a thin paste. Add potato mix, then 3 cups milk. Cook until slightly thickened. Add cheese and cook until melted.
