Chocolate Pie

Recipe by Keith and Barb Roark, in the 2008 Cook's Library of Treasures

2 squares of unsweetened baking chocolate

2 3/4 c. milk

1 c. sugar

1/3 c. flour

3 egg yolks

1 tsp. vanilla

1 Tbsp. butter

9 inch baked pie crust

8 oz. container frozen whipped topping

Melt squares of chocolate in a medium saucepan with 2 cups of milk over low or medium heat. In a separate bowl, mix sugar, flour and egg yolks. Gradually add in 3/4 c. milk. Pour egg mixture in pan with melted chocolate mixture. Stir until boiling. Remove from stove top and stir in vanilla and butter. Pour filling into baked pie crust. Cover with plastic wrap and cool in refrigerator. Once cooled, top with whipped topping and decorate with sweetened chocolate shavings.
