Tropical carrots

8 oz. can pineapple tidbits

4 c. sliced carrots, cooked

2 Tbsp. brown sugar

1 tsp. tapioca

1/2 tsp. salt

1/8 tsp. pepper

2 Tbsp. butter

Drain pineapple, but reserve liquid. Combine carrots and pineapple bits in a 1 1/2-quart casserole dish. Blend together sugar, tapioca, salt and pepper. Stir in pineapple juice and pour over carrots. Dot with butter. Cover and bake at 350º for 30 minutes. Serves 6.
