Chicken Cheese Roll
Recipe found in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library
6 boneless, skinless chicken breasts
4 to 6 c. milk
8 oz. pkg. cream cheese, softened
1 tsp. chives, dived
1/2 tsp. garlic powder
1 Tbsp. margarine
6 slices bacon, uncooked
salt to taste
Soak chicken for two to three hours in milk. Place chicken between plastic wrap and pound to 1/2-inch thickness, combine cream cheese, chives and garlic powder. Spread each piece with about three tablespoons of cheese mixture; dot each piece with butter. Fold ends over filling and roll. Wrap one slice of bacon around each breast; secure with toothpicks. Place in baking dish, seam side down; sprinkle lightly with salt. Bake at 375º for 35 to 40 minutes or until no longer pink in the center. Broil for about 5 minutes until bacon is crisp.
