Seven Layer Casserole

Recipe by Jennifer Wright, in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library

6 c. potatoes, cooked

2 cans mushroom soup

1/4 c. bell peppers, chopped

1/2 c. minute rice

1 to 1 1/2 lb. hamburger, browned with onion

1 1/2 pint pizza sauce

1 lb. mozzarella cheese

Cook potatoes. At the same time, cook onion and hamburger until brown. When potatoes are done, layer in the bottom of a greased baking dish. Follow with mushroom soup, peppers and rice. Place cooked hamburger and onions on top. Lastly, add pizza sauce and mozzarella cheese. Bake at 350º until it is hot all the way through, approximately 35 minutes.
