Poppy Seed Chicken

Recipe by Kaylah Ausmus, in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library

2 or 3 Tbsp. butter

2 lb. boneless chicken, cubed

2 Tbsp. parmesan cheese

2 cans cream of chicken soup

2 Tbsp. poppy seeds

1 tsp. sugar

8 oz. sour cream

buttery crackers, crushed

1 stick of butter

In pan, place 2 or 3 tablespoons butter and melt. Add chicken and parmesan cheese. Saute until chicken is done. Place chicken in bottom of 13- by 9-inch pan. Mix together the soup, poppy seeds, sugar and sour cream. Pour mixture on top of chicken. place crushed crackers over top. Cut the stick of butter into eight pats and place on top of crackers. Bake at 350° for 1 hour, uncovered.
