Fruit cocktail cake
Recipe by Dennis Williams, Weatherford, Okla., in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library
1 1/2 c. sugar
2 c. flour
2 eggs
2 tsp. baking soda
15 oz. can fruit cocktail
1/2 c. brown sugar
1/2 cup nutmeats, pecans or walnuts
Topping:
3/4 c. sugar
1 stick margarine
1 small can evaporated milk
1 tsp. vanilla
Mix sugar, flour, eggs, baking soda and fruit cocktail. Pour into ungreased 9- by 13-inch cake pan. Sprinkle brown sugar and nuts on top. Bake in a 325º oven for approximately 35 minutes. This cake can be served warm out of the oven or the following topping can be added.
Topping: Boil sugar, margarine and evaporated milk for about 20 minutes, or until it forms a brownish thin caramel-like glaze. Add vanilla and pour over cake while still warm from the oven.
