Cheeseburger Meat Loaf

Cheeseburger Meat Loaf

From the kitchen of Florence Poe The Poe Collection Cookbook

1 1/2 lbs. ground beef

1 small can evaporated milk

1/2 c. cracker crumbs

1 c. American cheese, shredded

1 egg, beaten

1/4 c. onion, chopped

1/4 c. bell pepper, chopped

1/2 tsp. dried basil leaves

3/4 tsp. salt

1/4 tsp. pepper

2 slices American cheese

Preheat oven to 350 °. Mix all of the ingredients except the slices of cheese together. Pour the mixture into a loaf pan and bake at 350° for 1 hour. Remove from the oven and drain off the fat and juices. Cut each slice of cheese in half diagonally and place on top of the loaf. Bake in the oven until the cheese is melted. Serve as is.
