Fruit and Granola Parfaits
From the kitchen of Debbie Anderson, Pea Ridge Recipes to Remember cookbook
1/2 c. low-fat vanilla yogurt
1/4 c. nonfat soft-style cream cheese
2 kiwi, peeled, halved lengthwise and sliced
1 1/2 c. frozen red raspberries
1 c. low-fat granola cereal
1 Tbsp. honey
1/4 tsp. ground cinnamon
1 medium banana, sliced
1 medium orange, peeled, cut into fourths and sliced
In a small bowl, combine yogurt, cream cheese, honey and cinnamon; beat with mixer on medium speed until combined. Chill.
To assemble, stir together fruit in another small bowl. Divide one-third of the fruit mixture among four parfait glasses or wine goblets. Spoon about 2 Tbsp. each of cream cheese mixture and granola atop fruit. Repeat. Top with remaining third of fruit. Serve immediately. Serves 4.
