2 c. lime

8 1/2 qt. water

Several cucumbers

1 c. vinegar

1 small bottle red food coloring

1 tsp. alum

2 c. vinegar

2 c. water

10 c. sugar

8 sticks cinnamon

2 10 oz. packages of red hots

Wash and peel large cucumbers. Cut into 1/2 in.

slices. Core out center, making rings. Mix lime and water; stir thoroughly and let settle. Pour over cucumbers and let stand 24 hours. Pour off liquid and soak cucumbers in cold water 3 hours. Drain.

Mix together vinegar, food color and alum with cucumbers and add water to cover. Simmer rings for two hours; drain and discard liquid. Mix vinegar, water, sugar, cinnamon sticks and red hots. Boil until red hots are melted. Pour over cucumbers and let set overnight. The next day, drain syrup and reheat syrup. Repeat three days. On the third day, heat rings and syrup thoroughly. Pack in jars and seal. Makes 8 to 12 pints.
