NEBCO RESTAURANT INSPECTIONS

— Information is from state Health Department records. Restaurants are listed in order of inspection date. All reports are from regular food service food store inspections unless otherwise noted. Critical violations are defined as items that relate directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Dec. 15

Tarena’s Family Diner 155 Lee Town Rd., Pea Ridge

Critical violations: Handwashing sink in wait area does not have hot water available.

Cold faucet (right side) is taped so that valve cannot be turned on. Hand sink must have hot and cold running water as well as soap and paper towels. White gravy was 121 degrees and mashed potatoes are 60 degrees.

All products in hot holding must be 135 degrees or above.

Critical violations: Mop sink/hose bib has a hose connected to the faucet and there is not a back flow prevention device installed on the faucet. Noncritical violations: Pumpbottles of slush flavoring are not labeled with contents.

White Oak Station

139 N. Curtis Ave., Pea Ridge

Critical violations: Hand sink in food prep area hot water handle does not turn and therefore there is not any hot water available at the hand wash sink. Noncritical violations: Employee washing hands in three-compartment sink due to above.

Sandwiches, chicken, parfaits, candy on front counter that are packaged for individual sales are not labeled with complete list of ingredients, a declaration of quantity such as weight or the name and place of business of the manufacturer or packer. The label must be on the food package.

Acambaro

150 S. Curtis Ave., Suite B&C, Pea Ridge

Noncritical violations: Steak 109 degrees, chicken breast 111 degrees, grilled onions and peppers 101 degrees; hot holding is 135 degrees or above. Employee going from dirty to clean dishes must wash hands in between. Must thaw food under constant running water or in cooler. Floors need to be smooth and easily cleanable.

Follow-up inspection - Noncritical violations: Potatoes were reheated from day before. It is not known if potatoes were not reheated hot enough or if the hot holding unit is not holding hot enough, potatoes 98 degrees (reheat food to 165 degrees or above). Maintain potatoes at 135 degrees or above at all times when out of refrigeration. Stir foods being cooled (ice bath) to ensure even cooling. Ice must be at or above the level of food. Use ice scoop to fill glasses, not just the glass.
