King Ranch Chicken

From the kitchen of Mary Durand, who was featured as the good cook of the week in the Pea Ridge Times Jan. 3, 1991.

Boil and de-bone two chickens, two to three pounds each. Line a 13-inch by 9-inch baking dish with corn tortillas. Sauté one large onion and one large bell pepper in one stick butter. Mix this with chicken and put half of that mixture in baking dish.

Add another layer of tortillas. In blender, combine one can cream of mushroom soup, one can Rotel tomatoes and eight ounces of chicken broth. Pour over top of casserole.

Bake uncovered for 30 minutes at 350°. Remove and cover top of casserole with grated American cheese, a lot if your family likes cheesy dishes. Cover with foil;

replace in oven for 30 minutes. Let stand for 10 minutes before serving.

Pumpkin Roll

Beat three eggs five minutes; gradually add one cup sugar. Stir in two-third cup canned pumpkin and one teaspoon lemon juice. Sift together three-quarter cup flour, one teaspoon baking powder, two teaspoons cinnamon, one-half teaspoon nutmeg, one teaspoon ginger and one-half teaspoon salt. Fold into pumpkin mixture. Spread onto greased and floured jelly roll pan. Bake in a preheated 375°-oven for 15 minutes.

Sprinkle a towel with some of the confectioner sugar.

When cake is removed from oven, turn it out onto the towel and roll up with towel inside roll. Cool in freezer for 10 to 15 minutes. Prepare filling by combining two cups confectioner sugar, eight ounces cream cheese, one-quarter cup butter, softened and one teaspoon vanilla. Beat until smooth. Unroll cake, cover with filling. Re-roll and wrap in waxed paper.

Chill several hours to be able to slice easier. Slice in 12 to 15 pieces.

Frosty Orange Drink

Mix quickly in blender: one-half cup cold milk, one-half cup cold water, one-half of six-ounce can frozen orange juice concentrate, one-half teaspoon vanilla, one-quarter cup sugar, five to six ice cubes.

Blend until smooth, about 30 seconds. Serves two or three. Can be doubled or tripled easily.
