Farmer’s Breakfast

Ozark Mountain Smoke House, Farmington Recipes of the Ozarks Cookbook

1 small onion, chopped

1/3 c. chopped green sweet pepper

1 c. chopped smoked ham

6 eggs, slightly beaten

1/2 c. milk

Tabasco to taste

Saute onions, green peppers and ham in 3 Tbsp. of butter in a large skillet. Mix eggs, milk and seasoning; pour into skillet. Scramble gently two or three minutes until set. Good with hot biscuits.
