Curry Chicken Salad

From the kitchen of Tissie Jones, Minden, La.

Editor’s note: This is a delicious chicken salad which was served at one of my debutante parties in Minden, La., many years ago. It’s wonderful for a summer lunch.

2 c. cooked, cut up chicken

1 1/2 c. dashed celery

1 1/2 c. dashed pineapple or whole seedless white grapes

1/4 c. shredded carrots

1/2 c. toasted almonds

1/2 c. mayonnaise

1/4 c. sour cream

1 tsp. curry powder

1 t. fresh lemon juice

1/2 tsp. salt

Combine all ingredients. Chill. Serve plain or with salad, crackers or on toast.
