Recipe of the Week - Fried Fish, Arkansas Style

It’s finally spring and warming temperatures are perfect for gathering the family for a good old fashioned Southern fish fry.

Fried Fish, Arkansas Style

6 lbs. fish fillets or pan-dressed fish

3 small bottles Louisiana hot sauce

12 c. milk

3 c. yellow cornmeal

1 c. flour

2 Tbsp. salt

1 1/2 tsp. cayenne pepper

1 1/2 tsp. garlic powder

Peanut oil

Marinate fish one hour in a mixture of hot sauce and milk. Remove fish and drain. Combine the dry ingredients in a large plastic bag. Add the fish a little at a time and shake to coat. Cook in peanut oil in deep fryer heated to 365 degrees. Fry until fish flakes easily with a fork, about five to six minutes. Remove and drain on paper towels. Repeat with remaining fish.

Serves 12-15.
