— Irish Soda Bread

6 c. flour

2 tsp. soda

2 tsp. baking powder

3 Tbsp. cornstarch

2 tsp. sugar

1 tsp. salt

2 1/2 c. buttermilk

Preheat oven to 375 degrees. Mix dry ingredients well. With wooden spoon, mix buttermilk with dry ingredients. Knead on board until smooth. Let stand for 10 minutes. Divide in half. Lightly grease sheets;

place dough and make a cross on top with knife. Bake 40 minutes.

Au Gratin Potatoes From the kitchen of Linda Reynolds The 2008 Cook’s Library of Treasures

Approx. 7 potatoes

1/2 to 1 medium onion

3 Tbsp. butter or margarine

2 Tbsp. flour

1 1/2 c. milk

4 slices American or cheddar cheese

Peel, cut and cook desired amount of potatoes.

While potatoes cook, dice onion and cook in butter until golden. Add flour, stirring well. Add milk and stir constantly. When sauce is hot but not boiling, add cheese. Stir until cheese is melted and sauce is simmering. Lower heat and simmer for 2 to 3 minutes, while stirring constantly. Remove from heat. When potatoes are done, drain. Add cheese sauce and mix well. Pour into 3-quart casserole dish and bake in over at 325 degrees for approximately one hour or until bubbling.
