The 2008 Cook’s Library of Treasures
Mom’s famous biscuits
2 c. all-purpose flour*
1 tsp. salt
4 tsp. baking powder
1/3 c. oil or bacon grease**
2/3 c. canned milk
1/4 c. butter, margarine or bacon grease, melted
*If using self-rising flour, omit salt and baking powder.
**If using bacon grease, reduce salt to 3/4 tsp.
Sift together flour, salt and baking powder. Add oil or bacon grease and milk. Stir with a fork until dough clings together and forms a ball. Turn out onto lightly floured surface. Knead 10-12 times, sprinkling more flour on top as needed. Roll dough out to 1/4 inch think. Cut biscuits out with a floured biscuit cutter or drinking glass. Place on ungreased cookie sheet. Using a teaspoon, indent the center of each biscuit, creating a shallow well. Pour one tsp. of melted butter, margarine or bacon grease into each well. Bake at 450 degrees for 10-12 minutes or until golden brown.
