Recipe of the Week - Cilantro Lime Rice

— 1 1/2 Tbsp. oil

1 c. white rice

1 c. (1 can) chicken broth

1/4 tsp. salt

1/2 c. chopped fresh cilantro

Grated rind and juice from one lime

Heat oil in a sauce pan and add rice. Stir to coat the rice. Add broth and salt and bring to a boil, stirring once. Reduce heat to medium low. Cover and cook for 20 minutes. Let stand 10 minutes. Fluff with a fork and stir in cilantro. Simple and refreshing!
