Nov. 19 Pea Ridge Primary School

Noncritical violations: Excessive condensation in freezer still a problem from the initial installation. Contact installer to correct the situation. Nonkitchen staff allowed in kitchen getting into the walkin and ice machine. Handwashing is required for anyone coming into the kitchen and handling equipment or utensils.

Pea Ridge Junior High School

1391 Weston, Pea Ridge

Critical violations: Hot-holding unit is not working properly and should not be used. Staff knows the unit was not working and still used the unit. Food on the salad bar is not at 41 degrees or below. No ice is being used to keep food cold; ham at 57 degrees, cottage cheese at 44 degrees.

Nov. 22 The Short Stop

Critical violations: Several packages of sliced deli meats exceed the manufacture use by date. Pulled, corrected.

One package of smoked brats is sliced open. Pulled, corrected. Noncritical violations: 7-Up cooler needs a thermometer if milk will be stored in it.

Short Stop Grill

18440 Marshall St., Garfield

Critical violations: Employees must wash hands after putting raw hamburgers on the grill even if the hamburgers are frozen. Carton of raw eggs above bag of onions. One bag of sliced meat in walk-in (roast beef) exceeds holding date. Redate meats if they are going to be frozen. Date the day product comes out of freezer. Greasy residue in sanitizer water. Dishes must be cleaned completely and rinsed prior to putting in sanitizer. Chicken strips not at 135 degrees or above.

Noncritical violations: Chicken thawing in water on counter (still frozen);

thaw in refrigerator or under cold running water. Employee’s hair is pulled back but not effectively; hair is too long and falls over her shoulder.
